My name is Kate and I’m a mother of 2 homesteading from our humble apartment in coastal Maine. I have a k-12 degree in Art Education, a Bachelors of Fine Arts, and a Holistic Health certificate. I began homesteading around 2006 when I watched a documentary on the dangers of plastics and another on the dangers of GMO’s. Since then, I’ve been on a crusade to banish chemicals and plastics from my home for our health and for the planet. Our simple way of living has brought our family closer together, and we’re all healthier for it. Apartmentsteading, or homesteading in an apartment, is basically limiting your footprint and living sustainably in a suburban or urban environment.
In addition to banishing plastic from our home, we have banished gluten because 2 out of 3 of us are Celiacs. This means we cannot have wheat, rye, spelt, barley, non-gluten free oats, or variations of these grains, such as semolina. You will notice that in addition to being gluten free, that many posted recipes are also vegan, both for ethical and sustainability reasons.
