Cranberry Orange scones…that are shaped weird.

I like anything cranberry orange. And I like scones. So why not, right?

I tried to adapt this recipe to make it more simple, but this is the best I could come up with that still tastes good.

In a bowl mix:

1/2c oat flour

1 1/3c brown rice flour

1/3c tapioca or potato flour

2t baking powder

1/2t baking soda

1/2t salt

1t xanthan gum

Mix these in a separate bowl:

1/2c unsweetened applesauce

1/4c soy or rice milk

3T coconut oil

1/3c brown sugar

2t vanilla

1c fresh cranberries

zest of one orange


Combine the two bowls of ingredients. Your dough should be a little stiff, but if it’s not stiff enough, chill it for about 15min in the refrigerator. When you take it out, roll it into a 9″ round, then slice it into 8-12 pieces. If you’re worried about it sticking to the counter, you can do this all on parchment. I used a scary-looking kitchen utensil.

Cook these things for about 20min at 375. They should look like this when they’re done:

I know, I know, they’re shaped weird. It’s because they’re real scones, and not bricks.
